Grafton is one of the nicer villages for strolling. There's no major road through it, the utilities are underground and the buildings well preserved. The area around Grafton should still be ok next weekend, baring any major storms. It wasn't at peak when I drove through Saturday.

There are a lot of trails near Manchester. The Long Trail runs north/south east of town, so all the main east/west roads cross it. The trick is finding a hike that has some views. There are a bunch of covered bridges within 30 minutes of Rutland. There's one over the lower Clarendon Gorge just south of Rutland.
