I drove through Woodstock yesterday- the color is nice, but there are some bare trees in that area. For family oriented/kid friendly in Ludlow, I've had good meals at Sam's Steakhouse (great salad bar) and the Pot Belly (varied menu with lots of choices!) If you don't mind traveling a bit beyond Woodstock (heading west and/or south)you may want to consider the following: the LongTrail Brewery is located at the corner of route 4 and 100A. I live in NYS and the foliage is nowhere near as beautiful as VT... the finger lakes area is nice, but the color is not as intense or as wide spread. Some of the state parks (i.e. Letchworth) can be very colorful toward the end of October.
Given a choice between NY and VT foliage, I'd chose VT!

www.cyberrentals.com has a LOT of rental listings for VT and I've had good experiences in renting from people who list their properties with them.
